The History of Pizza

The ancient Greeks were the first to bake large, round flat breads, which they "anointed with oil, herbs, spices and Dates. However, during the 18th century, merchant ships carried the flat breads across the Ionian Sea to Italy where they were quickly adopted and given the name "Pizza". Pizzas quickly gained favour as a “fast food” and were sold on streets and in the markets of Naples and in other large towns.

Around 1889, Queen Margherita, sampled pizza while on a tour of the provinces. On returning to her court, the palace chef Rafael Esposito was asked to bake a selection of pizzas for her. To honour the queen, Rafael decided to make a very special pizza, topped with tomatoes, Mozzarella Cheese, and fresh Basil (to represent the colours of the Italian flag. This became Queen Margherita's favourite pizza and when word got out that this was one of the queen's favourite foods, she started a culinary tradition, the Pizza Margherita, which lasts to this very day.

When you enjoy your next Pizza, think of the pizza loving Queen Margherita

and her devoted Chef Rafaelle.
